Sometimes you just have to go back to your roots. Years ago, the crockpot was my absolute favorite kitchen appliance. Nearly every meal I made was a crockpot dish. Over the years I’ve definitely fallen in love with some other appliances and cookware, but the slow cooker will always be my first love. This week I decided to make a similar dish that I’ve previously made in the cast iron skillet but with my beloved slow cooker. This Crockpot Honey Garlic Chicken and Veggies came out better than it did in the cast iron, but I may be a little biased. The sauce and the flavor of the chicken thighs were everything my taste buds were craving today and with the crockpot working its magic, I managed to prep the dish in no time and still lead a very productive day!

The secret is in the sauce with this recipe. Turning the remaining sauce in the crockpot into a glaze really added a little ‘je ne sais quoi’ to the entire dish. After the chicken has completed cooking you can add some cornstarch and water and allow the sauce to simmer and thicken.  You can achieve this by simmering in your crockpot or just removing some of the sauce to a saucepan to let it cook to your desired thickness. When I made a similar chicken and veggie dish I felt the sauce was a little overbearing on the potatoes, specifically, but this glaze was a perfect solution to the already sauce soaked spuds.

I absolutely love the flexibility using the slow cooker provides. I prepped this meal in the morning and carried out all the errands I intended to run today but still managed to have a great meal at the end of the day. Today’s recipe really reminded me to visit my good old slow cooker more often. Making a meal and accomplishing all I set out to accomplish today made me feel like Wonder Woman, and I have to give credit to my crockpot for making it happen!

Slow Cooker Honey Garlic Chicken and Veggies

What You Need:

  • 2 lbs. chicken thighs, bone-in
  • 1 lb. baby red potatoes halved
  • 1 lb. carrots peeled
  • 1 small white onion, chopped
  • 12 oz. green beans trimmed
  • salt and pepper to taste

Honey Garlic Sauce

  • 1/3 cup honey
  • 1 tbsp garlic minced
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 2 tsp dried oregano
