I’m a Sucker for a Salmon Recipe!

I know you’re all not surprised to see another salmon recipe, but in my defense- I wasn’t even expecting to cook this one. You all know how the story goes, you’re perusing the internet for nothing in particular and then a cooking video catches your eye. You don’t want to get sucked in but of course, it’s your favorite fish. You try to resist the urge and then you realize you have most of what you needed. Then without realizing it you’re on your way home and end up at the grocery store buying the remaining ingredients for Baked Pineapple Salmon.  Naturally, my stomach was satisfied with this simple and delicious dish so I had to share, once again.

Pineapple is one of my favorite fruits. Baking salmon on top of a bed of those delightful citrus rings had me salivating from the start. After buying this massive three-pound fish with the skin still attached I questioned if I had made the right choice in keeping it. There was a lot of debate in the comments section of this recipe if you should remove the salmon’s skin. I considered testing out my skill on this large fish and removing the salmon myself but I ultimately decided to keep it on. The flavor was still pungent and I didn’t feel like I was missing much but I may try to cook this recipe in the future the other way around.

While I love planning ahead and making the meals I set out to for the week, I love recipes I stumble upon and make day of. Spotenaety is key to breaking up the monotony of a workweek. When you feel inspired, go for it. I loved this recipe not only for its amazing flavor complimented by some cilantro lime rice but it got me out of a rut that day! Satisfied by salmon once again!

Baked Pineapple Salmon

What You Need:

  • Cooking spray, for pan
  • 17 pineapple rings, fresh or canned 
  • large salmon fillet (about 3 lbs.) 
  • Kosher salt
  • Freshly ground black pepper
  • 6 Tbsp. melted butter
  • 6 Tbsp. sweet chili sauce
  • 4 Tbsp. freshly chopped cilantro
  • cloves garlic, minced
  • 4 tsp. freshly grated ginger
  • 2 tsp. sesame oil
  • 1 tsp. crushed red pepper flakes
  • Sesame seeds, for garnish
  • Thinly sliced green onions, for garnish
  • Lime wedges, for serving
