This is the comfort food of all comfort foods. From a blue box or from scratch, Macaroni and Cheese can soothe the soul. For years I only ate mac from a blue box or a family recipe made by my mother or grandmother. Luckily, in my years of kitchen adventures, I have found a happy, cheesy medium. As soon as I realized how easy it is to make my own mac and cheese, buying boxed mac became a thing of the past.
What I love most about this simple side dish is the ability to spice it up however you want. There’s so much room for creativity when it comes to making Mac. Swiss, Monterey Jack, Provolone, there are so many cheeses to choose! Top it with fried chicken, bacon, or brisket to make loaded mac & cheese. But to be honest I’m very much a purist when it comes to my mac & cheese. Give me a great sharp cheddar and I am in heaven!
Finding a great home made mac and cheese can be a challenge. This recipe has never let me down as long as noodles are al dente and melted cheese is gooey I will continue this cheesy quest!
My Baked Mac and Cheese
What you need:
- 3 cups elbow macaroni, cooked
- 2 cups milk
- 4 cups sharp cheddar cheese (or the cheese of your choosing)
- 2 TBS butter
- 2 TBS flour
- 1 tsp salt
- 1/4 tsp pepper

- Preheat the oven to 350 degrees.
- In a large saucepan, melt butter. Add flour, milk, salt, and pepper.
- Stir ingredients together slowly until thick.
- Add 3 cups of cheese. Stir until well blended.
- Place cooked macaroni in a 13×9 baking pan.
- Pour cheese sauce over the noodles, stir until well blended.
- Bake macaroni, uncovered for 30 min.
- Take the remaining cup of cheese and sprinkle on top of baked macaroni.
- Bake until melted and golden on top, around 5-10 minutes.
- Enjoy that cheesy goodness!

- Add 3 cups of cheese. Don’t be afraid to experiment with cheeses! Stir until well blended.
- Place cooked macaroni in a 13×9 baking pan.
- Pour cheese sauce over the noodles, stir until well blended.
- Bake macaroni, uncovered for 30 min.
- Take the remaining cup of cheese and sprinkle on top of baked macaroni.
- Bake until melted and golden on top, around 5-10 minutes. You may want to broil on high for about 5 minutes for extra browning.
- Enjoy that cheesy goodness!
