The Sheet Pan Series: Can Do Cajun Dinner

This recipe rocked my world with its simplicity and Louisiana flavors. This is my third sheet pan meal and while it’s super similar to last week’s dish, it was probably my favorite baking sheet creation thus far. This Cajun Shrimp, Sausage, and Veggies packed a flavorful punch and lasted me for a few meals during the week. It sparked the idea of making a sheet pan meal once a week like this one so I can have prepped lunches or dinners.

Again, I had to ramp up the spice on this recipe. What can I say, a southern girl loves her food highly seasoned. Initially, while the veggies and protein cooked I did question if I was too heavy-handed this time around. I have made similar foil packets that have turned out too salty depending on the seasoning. This was a huge quantity of veggies, sausage, and shrimp and I didn’t want to mess that much food up being overzealous with the seasoning. Luckily this time around I got it right. I would recommend using moderation when applying any extra seasoning. Adding more than I used this time may be too much for some and less would still taste great!

My love of the sheet pan is only intensifying. In the near future, I am looking for the perfect baking sheet chicken recipe. So far making full dinner’s on a baking sheet hasn’t had the adventure or mishaps like I had with my Instant Pot. That’s why I’m loving it! I’m really benefitting from the simplicity, easy, prep and effortless clean-up of every meal I’ve made so far. You know your girl likes simplicity and convenience! I’m going to take a short hiatus from the ‘Sheet Pan Series’ but don’t fret, there will definitely be more simple recipes for those busy nights! I can’t live without them.

Sheet Pan Cajun Shrimp, Sausage, and Veggies

  • 1 ib. large shrimp, thawed, peeled and deveined
  • 14-oz. pork sausage, sliced
  • 2 medium-sized zucchini, sliced
  • 2 medium-sized yellow squash, sliced
  • ½ bunch asparagus, sliced into thirds
  • 2 red bell pepper, chopped into chunks
  • Salt and Pepper
  • 4 Tbsp. olive oil
  • 2 Tbsp. Cajun Seasoning

Instructions:

  • Preheat oven to 400 degrees.
  • Add the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper and salt and pepper to large baking sheet covered with foil.
  • Add olive oil and cajun seasoning and toss until coated.
  • Spread evenly onto a sheet pan.
  • Bake in the preheated oven for 15-20 minutes or until shrimp is pink and vegetables are tender.
  • Serve and enjoy!
