Slow Cooker Season: Mom’s Spicy Super Bowl Queso Dip

It’s almost Super Bowl Sunday!  I’m not that excited for the game because my favorite team, the Dallas Cowboys, is not playing in it this year. I am excited, however, for all the awesome food I will have a chance to devour at a Super Bowl party! In an effort to contribute to the spread, I was reminded of an awesome side my Mom would make in years past. Her famous Slow Cooker Spicy Sausage Queso Dip has always been a hit with her former co-workers and party guests over the years. How could you go wrong with delicious melted cheese with spicy sausage? It’s the perfect queso for any party!

It’s important to make sure your sausage is cooked through when you mix everything in the slow cooker. This recipe does not take enough time to cook the sausage in the slow cooker while the cheese melts. This is a quick and easy dip that only takes a couple of hours to prepare. You’re really just warming up the other ingredients and making sure all the cheese is melted. Stirring occasionally is also an important aspect to perfecting this dip. If the cheese sits for too long there is a layer of film that develops and will begin to turn brown due to the dip cooking. This isn’t anything to worry about if it happens, just stir and you’re good to go!

This recipe makes a lot of cheese dip. It’s perfect for a big party. If you want to make a smaller batch for your own personal consumption I would recommend halving the recipe. Five pounds of melted cheese is a lot for one or two people. You may not like the Patriots or the Rams but I think we can all agree that queso dip is delicious! Give this dip a try, your taste buds will feel like champions!

Spicy Sausage Queso Dip

  • 1 lb. Ground sausage (I use hot.)
  • 1 white onion, chopped
  • 5 lb. Velveeta cheese
  • 2 cans Rotel Tomato and Green Chilies
  • 2 jalapenos, diced
  • 2 cans Cream of mushroom soup
  • Tortilla chips

  • Brown ground sausage with chopped onion until the meat is cooked through and the onions are soft. After meat is cooked, drain excess fat.
  • While meat is cooking, chop the Velveeta cheese into squares and place them in the slow cooker.
  • Place Rotel, jalapenos, cream of mushroom soup, and sausage and onion in the slow cooker on top the cheese and mix well.
  • Cook on HIGH for 2-3 hours, stirring occasionally until cheese is fully melted.
  • Serve with chips and enjoy!

Cook With Me:
