Terrific and Tasty Thirty Minute Tortellini

I must admit, I’m on a bit of a tortellini kick as of late. I don’t know what it is, but I’ve just been craving these cheese-stuffed pieces of pasta. Any recipe I can find that incorporates these tiny packets of cheesy goodness, I’ve been dying to try out! This week’s recipe blew me away. This One Pot Creamy Tortellini with Sausage took just over a half an hour to make and is full of robust flavors that your tastebuds just won’t get enough of. As you know, I’m a sucker for a one-pot easy meal and on a busy work night, I am sure to replicate this recipe again in the future!

I can attribute much of the ease in the recipe to the fact that most of it is made with frozen ingredients. Of course, I would have loved to make this recipe with fresh ingredients but honestly, to know that I had most of the ingredients frozen and ready to go was a win in my book. I considered subbing the broccoli for fresh but hey, it all tastes the same to me. In the future, I would like to change the protein to maybe a chicken sausage or a hot sausage to add more or a different flavor going forward. I also would consider using fire roasted diced tomatoes as well. The more vibrant flavors the merrier!

I love finding meals like this tortellini and sausage. Once you’ve tried the recipe in it’s most basic form, the possibilities are endless in developing the flavors to suit your tastes. If you want to kick up the spice, kick it up! I definitely added a good helping of red pepper flakes to satisfy the heat lover in me. Mixing it up and making recipes my own is my favorite part of cooking, I urge you cooking lovers out there to do the same!
