The Sheet Pan Series: Super Steak and Potatoes to the Rescue

Summer is upon us and with the warm weather comes ample opportunity to break out of the house and enjoy all things outdoors. Unfortunately, for me, this meant neglecting my kitchen. In fairness, I had a wonderful holiday week with my family and friends! In the end, I took a week off the blog and admittedly had a hard time getting back into the swing of things. With way too much fun and sun lately and it’s hard for me to miss out on any of it!

I decided to ease back into my cooking routine and make a better effort at prepping meals for my lunches throughout the week. This Sheet Pan Flank Steak with Garlic Potatoes and Veggies may have singlehandedly reignited my passion for the kitchen. Initially, I was turned off by the minor inconvenience of having to boil the small potatoes prior to roasting them on the sheet pan. Twenty minutes of boiling?! You have to be kidding me! In fact, the boiling helps speed up the process and while your taters boil you can prep all your other veggies and the steak making this recipe a breeze.

When I tasted this flank steak, it genuinely felt like a little piece of my soul had been restored. I paid special attention to the meat cooking under the broiler. I’ve never cooked a steak this way before and I feared overcooking it. I was shooting for a mostly medium steak and in the center, I was pretty close to achieving that level of doneness. The flavors of cumin, garlic, and oregano were a delight to my taste buds and I’m already feeling inspired for my next adventure in the kitchen. After traveling and getting back to the work grind I had indulged too much in fast food. Quite frankly I was growing bored with taking out food. My body craved a home cooked meal!

Sheet Pan Flank Steak with Garlic Potatoes and Veggies

  • 2 lbs. Flank Steak
  • 2 lbs. Small Red Potatoes
  • 2 cups Broccoli Florets
  • 1 Medium White Onion, sliced
  • 2 Small Red Peppers, cut into cubes
  • 6-8 Cloves of Garlic, minced
  • 1/2 cup of Olive Oil
  • 2 Tbs. Ground Cumin
  • 1 Tbs. Dried Oregano
  • Salt and Pepper to taste

Instructions:

  • Preheat your oven to “high” in broil mode.
  • Add cooking spray to the sheet pan.
  • Separately boil the potatoes with salt for 20 minutes.
  • In a large bowl, combine 4 cloves of garlic, olive oil, cumin, oregano, salt, and pepper.
  • Mix well and pour over the broccoli, the onions, the red pepper and boiled potatoes and then add to the sheet pan.
  • Season the flank steak with pepper, salt, and the rest of the garlic, then cut into thin slices and add to the sheet pan.
  • Cook under the broiler for 5 – 7 minutes and then flip the meat and continue cooking on broil for 5 – 7 more minutes until cooked to your desired level of doneness.
  • Serve and enjoy!
